Description

This is a vegan version of the Olivier salad, which is a traditional salad dish in Russian cuisine that is typically made with meat, eggs, and mayo. However, we made it 100% vegan but it’s very delicious nonetheless.

Ingredients

Units Scale
  • 500 grams potatoes
  • 150 grams carrots
  • 100 grams green beans
  • 100 grams peas
  • 100 grams corn
  • 4/5 tbsps vegan mayonnaise
  • 1 pinch salt
  • 1 pinch black pepper
  • parsley

Instructions

  1. Heat a large pan of water.
  2. Peel the potatoes and carrots and cut them into small pieces.
  3. Cut the green beans into small diagonal pieces.
  4. Place the potatoes, carrots, green beans, and peas to cook but wait a few minutes before adding each one as they have different cooking times.
  5. When the vegetables are soft, remove them and place them in a large bowl.
  6. Add the corn, vegan mayonnaise, salt, and black pepper. Mix and adjust the seasoning.
  7. Sprinkle with parsley and it’s ready to serve.
