Description
This vegan chocolate salami is based on a traditional recipe from Portugal, the place where I was born, but it’s without egg and dairy— making this a delicious alternative for vegans!

- 180 grams biscuits (preferably Marie biscuits)
- 130 grams cooking chocolate (70% cocoa)
- 100 grams margarine
- 40 grams icing sugar (5 tablespoons) + more to sprinkle
- 20 grams plant-based milk (2 tablespoons)
Instructions
- Crush 180 grams of biscuits into small pieces, for example by putting them in a bag and breaking them up with a rolling pin.
- Melt 130 grams of cooking chocolate in a water bath.
- Mix in 100 grams of margarine and let it melt.
- Mix in 40 grams of icing sugar.
- Add 20 grams of plant-based milk and combine.
- Add the crushed biscuits and coat well.
- Transfer the mixture to the baking paper along its center. Wrap the mixture in the paper, applying some pressure to shape the salami.
- Place in the refrigerator until it’s solid (2 to 3 hours should be enough)
- Sprinkle with icing sugar before serving (optional).
Notes
- You’re free to include other ingredients besides biscuits, namely pistachio nuts, hazelnuts, almonds, sunflower seeds, or whichever ingredients tickle your fancy.
- If you can’t find Marie biscuits (which are really common in Portugal and Spain), you can use rich tea biscuits or shortbread. They should also work very well for this recipe.
- The total time includes the chill time. It only should take you about 15 minutes to prepare the salami.
