Vegan Cake with Chocolate Sprinkles (Ant Cake)

As our first online recipe, this is one we consider to be very special— it’s vegan version of one of our favorite cakes – the Ant Cake, which is essentially a vegan cake covered in chocolate heaven and sprinkles.

This cake was a hit! Our friends and family loved it and weren’t able to tell whether or not this cake was vegan had we not mentioned it at the table.

It’s very easy to make and requires no weird ingredients. Most likely you already have everything you need, particularly if you’re someone that likes making cakes from time to time.

📔 Vegan Ant Cake Recipe

Ingredients

Cake batter

  • 1 1/2 cups of wheat flour
  • 1/2 cup of whole wheat flour
  • 1 cup of yellow sugar (or brown sugar)
  • 1 tablespoon of baking powder
  • 1 coffee spoon of baking soda
  • 1 cup of unsweetened soy beverage
  • 1/2 cup of sunflower oil
  • 1 dessert spoon of lemon juice
  • 1 coffee spoon of vanilla flavor
  • 1/2 cup of vegan chocolate sprinkles

Chocolate coating

  • 4 tablespoons unsweetened soy beverage
  • 1 tablespoon vegan margarine
  • 2 tablespoons yellow/brown sugar
  • 100 grams of vegan culinary chocolate
  • vegan chocolate sprinkles

Making The Cake Batter

  1. In a large bowl mix the dry ingredients (wheat flour, whole wheat flour, brown sugar, baking powder and baking soda).
  2. In a smaller bowl add the liquid ingredients (soy beverage, sunflower oil, and lemon juice) and stir.
  3. Slowly pour the liquid mixture into the large bowl of dry ingredients and mix well.
  4. Add the vanilla flavoring and then the chocolate granules.
  5. Grease a baking pan (I used a round hole pan) and sprinkle with flour.
  6. Place the dough in the pan and bake in a preheated oven at 180º for about 35 minutes.
  7. Allow to cool before unmolding.

Making the Coating

  1. Put the vegetable drink, margarine, and brown sugar in a small saucepan.
  2. Bring to a simmer until the margarine melts and the ingredients are well combined.
  3. After turning off the heat, add the cooking chocolate, mixing well until the chocolate is completely melted.
  4. Pour over the unmolded cake creating the chocolate coating.
  5. Sprinkle with chocolate granules and it is ready to serve.

🌿 Replacements

If you prefer or have other ingredients at home it is possible to substitute:

  • Brown sugar for another type of sugar – yellow sugar is my favorite, but for those who don’t like it, prefer white sugar or simply because you can’t find it for sale in your country, you can swap and use, for example, the common white sugar.
  • Whole wheat flour for refined wheat flour – if whole wheat flour is the only ingredient you lack, making the cake with just the “normal” (white) wheat flour is an option.
  • Lemon juice for cider vinegar
  • Soy beverage for another vegetable beverage with or without sugar
  • Vanilla flavor is optional

Baking powder, baking soda, and lemon juice are important ingredients that should not be excluded.

If the frosting is thicker than intended, add a tiny bit more plant-based milk.

🧠 Keep In Mind The Following

The ingredients in this cake are generally easy to find, with the exception of yellow sugar which we could not find in some countries.

However, ingredients such as baking chocolate and margarine often include milk and/or dairy products in the ingredients. Still, you can usually always find vegan options.

Margarine, even though it says it is plant-based, does not mean it is free of animal ingredients, so keep that in mind when purchasing yours.

In Portugal, chocolate granules do not usually contain animal ingredients, however, it is better to be safe, and always read the label before buying.
