Chocolate Salami with Coffee and Pistachios
After making a vegan version of the traditional chocolate salami, I couldn’t help but try out a version with coffee. This version also includes pistachios which brings the flavor to a whole new level, if you’re a coffee aficionado like me, I’m sure you’ll love it too!
📝 Ingredients you’ll need for this chocolate salami
For this chocolate salami recipe, these are the ingredients I’ve used:
- Cookies: 130 grams of Maria cookies, equivalent to about 21 cookies. They are crunchy and give the salami an interesting texture. In some countries, it is hard to find these cookies, and it is possible to make the salami with tea biscuits or other simple cookies.
- Pistachios: 70 grams of unsalted shelled pistachios. They not only bring a satisfying crunch but also a beautiful color contrast to the salami.
- Dark Chocolate: I’ve used 130 grams of cooking chocolate with a minimum 70% cocoa content.
- Margarine: 100 grams of vegan margarine, which gives the salami its classic smooth, but firm texture once chilled.
- Coffee: an authentic shot of coffee, about 20 ml, is crucial for that deep, aromatic flavor that so wonderfully complements chocolate. It’s just magnificent.
- Sugar: to balance it all out, 40 grams of icing sugar. It adds just the right touch of sweetness to the salami without being exaggeratedly sweet.
👩🏻🍳 How to make this delicious chocolate salami
I started by melting the cooking chocolate in a water bath. While the chocolate melted, I coarsely crushed 130 grams of cookies. I did this by placing them in a sealed bag and crushing them with a rolling pin.
Once the chocolate was melted, I added the margarine and mixed it until completely melted. Then I stirred in the sugar. I prepared 20 ml of espresso coffee and blended it thoroughly into the chocolate mixture until all ingredients were fully incorporated.
Next, I added the broken cookies and the pistachios and mixed everything very well.
I then transferred the mixture to the center of a sheet of parchment paper and, with the help of the paper, applied some pressure to create the salami shape. I tightly wrapped it in the paper and placed it inside the refrigerator for about 3 to 4 hours to solidify.
Before serving, I sprinkled it with icing sugar, which is completely optional.

Instructions
- Melt the cooking chocolate in a water bath.
- While the chocolate melts, crush the cookies, for example, by putting them in a sealed bag and crushing them with a rolling pin.
- Once the chocolate is melted, add the margarine and mix until it is melted too.
- Stir in the sugar.
- Prepare 20 ml of espresso coffee and blend it thoroughly into the chocolate mixture.
- Add the crushed cookies and pistachios and mix well.
- Transfer the mixture to the center of a sheet of parchment paper and with the help of the paper apply some pressure to create the shape of a salami.
- Tightly wrap it in the paper and place it in the fridge for 3 to 4 hours to solidify.
- Dust with icing sugar before serving (optional).
Notes
- If you can’t find Marie cookies (which are very common in Portugal), you can use tea biscuits or other simple cookies.
- The total time includes the chill time. It only should take about 15 minutes to prepare the salami.
